What better way to use leftover mussels, make a cream pasta!
Ingredients:
I bought fresh pasta from Whole Foods
3 oz mushrooms
5 pcs thick Bacon, cut into small pieces
1 c Heavy cream
Left over Mussels (optional) I removed them from the shell and just topped it on the pasta.
1/2 broth from mussels (optional)
Fresh Parmesan cheese
Fresh Flat leaf parsley

1. Prepare your Mis en Place. Cut mushrooms, bacon, set aside.
2. In a hot pan, cook bacon.

3. Cook fresh pasta. Boil water, once boil add salt in water. Put pasta in for 3 min. Stir. Set aside.

4. Once cook, remove excess oil.
5. Add mushrooms, fry for 2-3 min.

6. Add cream and broth. Season with S/P. Stir and let it boil for 2-3 min. then lower the fire.

7. Add pasta in, make sure to coat all pasta with the sauce.

8. Roughly chop parsley and mix with the pasta. I usually place my fresh herbs in water so it last longer.

9. Serve pasta topped with some cheese, parsley and the cold left over mussels. Enjoy! :)
