Sushi Bake

Ive been seeing this recipe online. So might as well try it.

For this recipe, I used imitation crab & scallops, but you can substitute with cooked salmon, shrimp, real crab, extra imitation crab, or whatever combination of protein works best for you or is readily available. There are a few combinations I still want to try and experiment with and will definitely post if it’s successful.

Steve doesn't like mayo and imitation crab, so I made ours half scallops with less mayo (scallops from https://www.facebook.com/searanchLLC/

they deliver to your doorstep).

My kids said its the best meal ever! And this is the reason I cook different types of food, so they are open to all cuisines (and knowing other culture through food)

Ingredients:

1 lb Imitation crab

10 pcs medium scallops

1 c Japanese mayo (put as little or a lot)

siracha (optional)

3 c cooked white Jasmine rice/ Japanese rice

1/4 c rice vinegar

1 T sugar

1 lb Tobiko (Hmart has them its flying fish roe)

3.1 oz Furikake rice seasoning

1 lb wasabi tobiko (optional)

3 Green onions finely chopped

Seaweed flakes (optional)

Seasoned Seaweed sheets

1. Pre heat oven to 400 F.

2. In a pan heat up rice vinegar and sugar until it dissolves. Set aside.

3. Make sure to dry the scallops with a paper towel.

4. Season with S/P. Sear each side for 2 min, medium high. Set aside.

6. Roughly chop the crab meat in a bowl, mix with green onions, mayo and Tobiko, S/P to taste and Siracha (optional)

7. In a seperate bowl I cut the scallops into smaller pieces and added the mayo, green onions, wasabi tobiko (optional), and tobiko. S/P to taste

8. Mix rice and rice vinegar mixture and put in a pyrex. We're going to start layering the ingredients.

9. Put the Furikake seasoning on top of the rice.

10. Put the rest of the mixture on top of the rice. I did half crab and half scallops. Put more furikake seasoning on top.

11. Bake for 10 min. Serve with Seaweed sheets and seasoned seaweed flakes (my kids LOVE seaweed)
